LFI’s Antioxidants for Health & Wellbeing seminar brought together industry experts to share the latest research into the benefits and uses of these compounds, the market for products containing antioxidants, and future developments that could be utilised by the food industry.
Antioxidants are generating a great deal of interest in the food industry. The benefits of consuming a diet that is rich in sources of these phytochemicals are driving many privately- and publicly-funded research programmes. The potential for the food industry is increasing as new health benefits are discovered beyond their traditional antioxidant potential. Antioxidants are substances in foods and beverages which can prevent or slow oxidative damage to our bodies. When body cells use oxygen, they naturally produce free radicals which can cause damage. Antioxidants ’mop up’ these free radicals, helping to prevent disease. Health problems such as heart disease, macular degeneration, diabetes, cancer and other age-related diseases have all been linked to oxidative damage. Research is also uncovering new mechanisms at a cellular level, with phytochemicals playing a role in anti-aging, cognitive function and weight management. It is thought that a diet rich in fruit and vegetables helps to protect against disease and boost these other aspects. Research centres on the theory that fruit and vegetables are rich sources of antioxidants, which may protect against the damage caused by free radicals. We all learned about
